I connect to my PC running Ubuntu 10.10 running OpenSSH.
If I run Top or Htop, I can't see the full output.
If I tunnel to VNC, no problem seeing the full screen there.
Is this a iPhone limitation?

You can change the terminal size in the Session Editor. Tap on "Advanced" at the top of the screen. Terminal Size is under the advanced section.
